Hunk is one of the toughest boss fights in the game, especially if you are trying to beat him without getting damaged.
To even hit him, you need to parry his attacks. The boss will attack using both hands. While his hatchet is slow, his knife attacks are extremely quick, which makes it hard to parry unless you practice and get used to his movement.
While his attacks start out simple, his moves will get more complicated later on with multi-hit combo of varying timing.
If you manage a successful parry to stun him temporarily, quickly do a strong melee attack with your hatchet and then play defensively again. If you are too slow or attack too much, he will counter and hurt you.
If you managed to stun him enough where you get a prompt to melee him, shoot him with a Requiem round instead to deal a lot more damage.
Finally, you should try to stay close to him. If he gets far, he will start shooting at you with his gun. To avoid getting hit by his bullets, use the pillars while you close him on the boss to trigger his melee attacks.
You will most likely die a lot or restart a lot when fighting Hunk. When you do, the adaptive difficulty will eventually lower, making the fight go by quicker. So, keep practicing your parry against him until you can take him down without getting hit.
