Make sure to beat the main campaign to unlock the Stellar Speedway galaxy. You should then be able to play the Let it Slide level.
In order to unlock this trophy, you need to beat the blue bird to the stage exit. This opponent will take around 65 seconds to reach the end, which should be pretty easy to beat if you keep moving through the level.
