The boss will attack with its mouth and two arms. To avoid these, you need to constantly run horizontally.
When it opens its mouth, you should stop temporary to shoot at it. If you take too long, then you may end up getting hit.
The best weapon to use for this fight is the Requiem since you should be able to stun the boss with just one direct hit. Stunning the plant should also prevent its mount attack.
Once you do enough damage, some red barrels will appear. Shoot the explosives to end the fight.
